Door Selection, Hygiene Zones and Cleaning Regimes in Food Production

In food and beverage plants the door belongs to the hygiene plan: zone separation, open time, touch-free activation and surfaces that take the cleaning regime.

Door Selection, Hygiene Zones and Cleaning Regimes in Food Production

Door selection in a food facility starts with hygiene zones, users and cleaning conditions rather than a product name. This guide produces a requirements and verification record matching the facility hygiene plan to the dealer’s proposed door/automation scope. Facility/project parties provide conditions and the dealer product/installation scope; Alkur does not perform site surveys or on-site services.

From hygiene zone to product decision

  1. Name the two zones. Record goods-in, preparation, processing, packing and despatch passages separately. The facility team states which temperature, pressure or cross-contamination target concerns the door.
  2. Separate people and vehicles. Record pedestrians/forklifts, load size, two-way use, peak periods and hold-open time. Fast closing alone does not prove pressure or hygiene performance.
  3. Choose the opening command. Assess buttons, hand sensors, radar or vehicle detection against the actual passage. Touch-free opening can remove a shared contact surface; cleaning compatibility and safety need separate verification.
  4. Define safety scope. Match closing path, photocell/safety edge and stopping function to the model document. An activation sensor is not automatically a safety sensor.
  5. Specify cleaning. The facility states chemical, concentration, method, washing/pressure and frequency. Verify curtain, coating, seals, motor and sensors separately; one IP rating or material name does not establish washability of the complete system.
  6. Compare product and document scope. Identify door, motor/controller, sensor and loading-equipment model/revision. Do not invent disinfectant resistance, hygiene certification or sensing range absent from the technical sheet.
  7. Verify operation at the facility. The dealer’s authorised team records movement and safety checks; the facility hygiene team evaluates cleaning and zone targets in its own verification plan. Resolve open confirmations before closing the record.

Activation and safety serve different functions

EquipmentRole in the decisionScope to verify
Hand sensor / buttonOpening command for authorised passageDetection/contact arrangement, controller input, cleaning compatibility
RadarOpening request within its documented detection zoneCoverage, unwanted activation and actual model function
Loop detectorVehicle-presence command/detectionVehicle/loop match; not pedestrian detection or access permission
PhotocellSafety response through the documented beam/inputPosition, coverage and closing behaviour
Safety edgeDocumented contact/edge protectionDoor-controller pairing and functional test
STOPInstalled system stopping functionInput, operating mode and model test procedure

Multiple activation sources are connected according to the controller’s input/contact diagram. “All can be wired in parallel” is not a general rule; activation and safety inputs are not interchangeable.

Confirm against material and model data

Roll-up and folding HPVC specifications describe 900 g/m² Panama-weave PVC curtains, respectively 80 × 80 mm aluminium and 200 × 200 mm galvanised steel uprights. Both list up to 1.5 m/s with an inverter; this is not a fixed transit time, pressure-retention or disinfectant-resistance declaration. Glazing, bottom seals and installed safety configuration are stated separately in the quotation.

The hand sensor sheet documents 24 V, NO/COM and sensitivity adjustment, not 5–15 cm range, stainless/plastic housing or disinfectant resistance. The technician matches it to the chosen door/controller documents; detection testing is not proof of cleaning suitability.

The R2-equipped automatic door system in the LUVI manual lists 150 kg single-leaf and 120 + 120 kg double-leaf limits. They do not apply to every pedestrian mechanism or telescopic system. Verify closing/safety behaviour and leaf configuration in the actual model documents.

Documents and hygiene acceptance

The NORMDOCK shelter requirements for 3 mm/900 g/m² PVC, DIN 53352/53356/75200, antistatic and stain-resistant properties are not independent HACCP/GMP certification. Hygiene assessment concerns the facility plan and installed configuration. Record seal contact or visible gaps; light leakage is not a particle-permeability test. Complete-door performance is verified within the relevant declaration/test scope.

Output: hygiene-passage verification record

Record zone pair, pedestrian/vehicle profile, temperature/pressure target, chosen activation and separate safety function, cleaning conditions, model/document identity, check results and open confirmations. Assign each confirmation to the dealer, project or facility party. Touch-free operation, speed or a material name then remains a documented input rather than a standalone “hygienically suitable” conclusion; its basis and follow-up remain visible.
